National Cupcake Day 2019

Another National food day is here and this time it's National Cupcake Day. On the 13th June 2019, people, cafes and institutions around the UK will be baking a range of cupcakes to help raise funds for Alzheimer's Society and the fight against Dementia. You can show your support by joining in and baking or simply buying cupcakes to enjoy. It is an easy way to raise money for important research into a disease that so many people are affected by.

National Cupcake Day has been a successful event for the last few years, raising millions of pounds for the cause and has helped to open much-needed spaces where dementia sufferers and their carers can get support. This year is sure to be the same so get your mixing bowl and whisk at the ready and get prepared for a day full of baking and eating cupcakes; sounds like the perfect day if you have a sweet tooth.

If you don't have a recipe up your sleeve, or you're not quite the next Mary Berry we have come up with a delicious and easy cupcake recipe for you and all your friends and family to enjoy whilst taking part. It's easy for anyone to make, and you can get your children involved too and have a fun afternoon baking.

This Raspberry & Coconut cupcake recipe is a perfect summer cupcake recipe that is sure to pull in the crowds.

You will need:

  • 140g caster sugar
  • 50g desiccated coconut
  • 175g self-raising flour
  • 225g softened butter
  • 1/2 tsp vanilla extract
  • 4 tbsp milk
  • 2 large eggs
  • 140g raspberries
  • 280g icing sugar
  • 4 tbsp raspberry coulis

Before you start the fun part, preheat the oven to 190C / 170C Fan / Gas Mark 5. Line a 12-hole muffin tin with deep paper cases.

  1. Mix the caster sugar, desiccated coconut, self-raising flour, 140g of the butter, vanilla extract, eggs and milk into a mixing bowl and beat until light and fluffy, then gently fold in the raspberries until covered.
  2. Pour the mixture into the 12 cases and bake for 18-20 minutes until golden and firm to touch. Once baked, leave on the side to cool.
  3. For the frosting, mix the icing sugar, remaining 85g butter, and the raspberry coulis to make a fluffy icing. Pipe or spoon onto the cooled cupcake and finish with an extra sprinkle of coconut.
  4. Voila! Your cupcakes are ready to serve and eat.

To officially take part you can register with Alzheimer's Society for a fundraising kit so that all proceeds can be donated.
