Banana Pancakes

Try this healthy alternative to a classic favourite, with the delicious 2 ingredient pancakes. Free from dairy and gluten but full of flavour, these pancakes are great for those with allergies or just looking to improve their diet.

  • 1 large banana
  • 2 large eggs
  • (Optional) Top with fruit, nuts and honey

Instructions

  • 1. In a bowl, peel the banana and smash it into a pudding-like consistency.
  • 2. In a separate bowl, whisk the eggs together until the yolks and whites are completely combined.
  • 3. Mix together the banana and egg. The batter should be more runny than normal pancake batter.
  • 4. Heat a griddle over medium heat and drop roughly 2 tablespoons of batter onto the griddle. Cook pancakes until they are golden brown on each side.
  • 5. Add your favourite toppings and enjoy! These pancakes are best when eaten fresh and still warm off the griddle.
