Pancake
- 1 large banana
- 2 large eggs
- (Optional) Top with fruit, nuts and honey
Instructions
- 1. In a bowl, peel the banana and smash it into a pudding-like consistency.
- 2. In a separate bowl, whisk the eggs together until the yolks and whites are completely combined.
- 3. Mix together the banana and egg. The batter should be more runny than normal pancake batter.
- 4. Heat a griddle over medium heat and drop roughly 2 tablespoons of batter onto the griddle. Cook pancakes until they are golden brown on each side.
- 5. Add your favourite toppings and enjoy! These pancakes are best when eaten fresh and still warm off the griddle.
