65g cooked unpickled beetroot
60g halloumi cheese
400g can butter beans, drained and rinsed
1 spring onion, trimmed and finely chopped
1/2 tsp mixed dried herbs
15g fresh breadcrumbs
1 British free-range egg, lightly beaten
Freshly ground black pepper
1 tbsp sunflower oil
Serve with mixed leaf salad or chips.
1. Coarsely grate the beetroot and halloumi and set aside on a piece of kitchen towel.
2. Roughly mash the butter beans, then add the beetroot, halloumi, spring onion, herbs, breadcrumbs and egg. Season with black pepper and shape into 2 burgers.
3. Heat the oil in a frying pan and cook the burgers over medium heat for about 3 minutes on each side, until golden brown.
4. Serve the burgers with chips or salad.
