500g turkey mince
½ red onion, grated
1 garlic clove, crushed
2 teaspoon Madras curry powder
A handful of chopped coriander
1 egg yolk
1 tablespoon olive oil
4 burger buns
Mixed leaf salad or chips to serve
1. In a large bowl, mix together the turkey mince, onion, garlic, curry powder, coriander and egg yolk with a little salt and pepper.
2. Combine well with your hands, then shape into 4 flat burger patties.
3. Over a high flame, heat the oil in a frying pan, then cook the burgers for 5 minutes each side or until cooked through. Alternatively, you can use a burger press as it moulds patties into the perfect shape, thickness and weight. The press condenses the ingredients so they do not fall apart when cooking. Your burgers will be cooked within 5 minutes so you've got plenty of time to start preparing your chutneys, salads and chips.
4. If desired, toast the cut sides of the burger buns and place the salad on the bottom halves of the warm buns, then top with the burgers. Add some relish or chutney to add even more flavour.
